coconut blueberry muffins

i love me a good cooking blog, and i just discovered how sweet eats recently..

the recipes are delicious, the pictures are detailed, and she always has really funny commentaries accompanying the recipes..

i used to be terrified of coconut (it's just so pale and has a strange texture that is not crunchy nor chewy), but my father loves it with a passion..if you've ever seen my father eat, you will understand how i began to love coconut after he insisted i give it a chance..the man loves his food, and i think he has a gift for prodding people into trying and eventually loving foods they never thought they could love..i mean, he somehow got me to eat turtle!

anyways, i was pretty darn excited when i saw this recipe, and whipped it up for family dinner this week..

my thoughts:

-coconut oil is expensive! $8.99 for a jar, but it's healthy! and multi-purpose to boot!

-i love muffins..no need to spray or butter the pan..just line with cute baking cups!

-coco-nutty much? the recipe called for coconut oil, coconut milk, and shredded coconut..the end taste is actually a very mellow and soft coconut flavor..

-yum! i will definitely be making again :)
